No matter how busy you get, there’s no reason dinner can’t be both delicious and nutritious. With these easy, healthy dinner recipes, you can have a home-cooked (and cheap) dinner on the table in less than a half hour.

Cheesy Enchiladas

Ingredients

  • 2 cans black beans (30 oz.)
  • 1/2 cup salsa
  • 1 cup yellow corn
  • 1 1/2 cup shredded cheese
  • 8 flour tortillas (10′)
  • 1 can enchilada sauce

Directions

  1. Preheat oven to 350 degrees.
  2. Mix beans, salsa, corn, and 3/4 cup shredded cheese in a bowl.
  3. Scoop mixture into each tortilla shell, roll shells, and place in a lightly greased 9″x13″ baking dish.
  4. Cover with enchilada sauce and the rest of the shredded cheese.
  5. Bake for 20 minutes and serve.

Vegetable and Turkey Stir-Fry

Ingredients

  • 1/4 cup chopped broccoli
  • 1/4 cup chopped water chestnuts
  • 1/4 cup chopped carrots
  • 1/4 cup chopped mushrooms
  • 1/2 tsp. garlic powder
  • 1 cup cooked ground turkey
  • 3 cups brown rice (cooked)
  • 1 tbsp. oil

Directions

  1. Cook rice and set aside.
  2. Brown ground turkey in a skillet and set a side.
  3. In another skillet, heat oil on medium heat and add chopped vegetables, garlic powder, and salt. Stir for 4 minutes.
  4. Reduce to low heat and add cooked turkey. Cook until vegetables are tender.
  5. Pour over cooked rice and serve.

No-Bake Tuna Casserole

Ingredients

  • 1 package of egg noodles (8 oz.)
  • 3 oz. cream cheese
  • 1 can condensed cream of chicken soup
  • 1 chicken bouillon cube
  • 1 can tuna (5 oz.)
  • 1 tsp. yellow mustard
  • 1/3 cup milk

Directions

  1. Set cream cheese out to soften.
  2. Cook noodles according to package instructions and drain.
  3. In a large bowl, mix cream cheese and soup.
  4. Add chicken bouillon cube, mustard, and milk to bowl. Stir well.
  5. Add cooked noodles to the bowl, toss, and serve.

Cowboy Salad

Ingredients

  • 2 cans black beans (30 oz.)
  • 1 can yellow corn (15 oz.)
  • 1 bunch cilantro
  • 2 cups green onions (chopped)
  • 3 tomatoes
  • 1 tbsp. vegetable oil
  • 1 lime
  • 1 bag of tortilla chips

Directions

  1. Chop the cilantro and onions (if not already chopped) and dice the tomatoes.
  2. Drain and rinse corn and black beans.
  3. Combine ingredients in a bowl, add vegetable oil, and a squeeze of lime. Toss lightly.
  4. Add salt and pepper to taste. Serve with tortilla chips.
