There are a few things you absolutely have to eat to get a true taste of Texas. Think of it as required eating. Texas is known for a few famous foods, like barbecue, kolaches, and tacos – more specifically, breakfast tacos.
Nothing encapsulates classic Tex-Mex cuisine quite as well as the breakfast taco. It’s the perfect marriage of Mexican culture and Anglo ingredients. Today, it seems you can find tacos on any menu, but that hasn’t always been the case.
Austin, TX: The Birthplace of the Breakfast Taco
Austin, TX, is the birthplace of the phrase “breakfast taco.” It’s where breakfast tacos began as a sort of novelty, something you could quickly grab at a walk-up window – and exploded in popularity.
The origins of the breakfast taco can be traced to Mexican immigrant families living in Texas. Since the tortilla is the basis of much of Mexican cuisine, it was only a matter of time before home cooks got creative. Still, breakfast tacos (and Mexican food, in general) didn’t achieve a widespread following in Texas until fairly recently. Segregation in Austin limited Mexican restaurants to East Austin, and Mexican food was still largely stigmatized as recently as the mid-20th century.
The Valera-Vasquez family, who opened Tamale House in Austin, was one of the first to popularize breakfast tacos in the 1980s. Though the original Tamale House locations have shuttered, you can still visit Tamale House East on 6th Street, where Valera-Vasquez descendants are still slinging some of the best Mexican food in the city.

Texas Breakfast Tacos Recipe
- 4 ounces cooked sausage
- 6-inch corn tortillas
- 5 eggs
- 2 tablespoons milk
- 1 cup shredded jack cheese
- 1 cup salsa
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons cilantro, chopped
- Hot sauce, to taste
- Add eggs, milk, salt, and pepper to a medium bowl and whisk together.
- In a lightly oiled skillet over medium heat, pour in egg mixture and stir frequently.
- Right before eggs are cooked to your liking, add sausage and half the amount of shredded cheese to the skillet. Remove from heat when done.
- Assemble tortillas and fill with egg mixture, topping with remaining cheese, cilantro, and salsa.
